We don’t buy our breads from a supplier. Every sourdough loaf, brioche bun, and Poee bread you see here is slow-fermented and baked right in our Vashi kitchen. This means when you order a sandwich, you are eating bread that was out of the oven just a few hours ago, keeping the texture perfect and the flavor profile distinct, never compromised by the artificial preservatives found in store-bought loaves.
Our approach to savoury bakes is simple: if we can make it better from scratch, we do. That is why you won’t find mass-produced buns or generic sandwich bread here. We focus on two pillars—technique and local flavour.
The Bread Matters
Everything starts with the dough. Whether it is our sourdough fermented for maximum depth, our soft brioche, or the rustic Goan Poee, the bread provides the structure for the entire meal. By keeping everything preservative-free, we ensure that the crusts are crisp and the crumbs remain soft, the way they should be.
