Why I Bake

Baking for me is all about stories and memories. Each loaf I make at Moi Doughssier carries a bit of my heart, shaped by hand and shared with my Navi Mumbai community. Bread isn't just a side dish here - it's the hero.

How My Breads Are Made

  • Every single loaf is handcrafted - no machines, just my hands and patience.
  • I stick to slow fermentation and natural leavening, which means better flavour and gut-friendly breads.
  • Ingredients are simple, clean and honest. No preservatives or weird stuff.

Sourdough & More

My naturally leavened sourdough range is the core of what I do:

  • Classic country sourdough - crunchy outside, soft inside
  • 100% wholewheat sourdough - no maida, high fibre, hearty taste
  • Gluten-free ragi bread - made with finger millet, perfect for those avoiding gluten

Everyday & Special Bakes

  • Multigrain, sandwich, and milk loaves for everyday cravings
  • Brioche buns, bagels, and even a Korean-style garlic bun
  • Focaccia, Italian maritozzi, French viennoiserie, and traditional Goan Poee for when you want to try something new

Health Without Compromise

I work with dieticians and listen to my customers. That means:

  • Whole grain, no maida
  • Gluten-free and sugar-free bakes available

My Story

Hey, we’re Moi Doughssier. Started off just baking breads for pre-orders, now we’ve got a whole café in Vashi – still feels wild sometimes. Nafisa here, pastry chef, obsessed with making food that’s got some soul. Our Basque cheesecake? People say it’s the best in Navi Mumbai. We’re all about that mix – French style, desi feels (Indian vibes). Every bake’s got a story, and yeah, loads of late nights too.
