Live Street Chaat Station
Station Setup
- Staff: Uniformed chef wearing gloves and head cap for live assembly.
- Hygiene: Mineral water used for Pani Puri water. Glass/melamine bowls for ingredient display.
- Serving: High-quality paper plates or Areca leaf bowls with wooden spoons.
Menu Options (Choose 3-4)
- Pani Puri: Semolina/Wheat puris with Spicy Mint and Sweet Tamarind water.
- Dahi Puri: Crispy base topped with chilled sweetened yogurt and sev.
- Bhel Puri: Puffed rice tossed with onions, tomatoes, and chutneys.
- Chaat Bites: Fusion canapes served in bite-sized edible tart shells.
Live Charcoal Tandoor & BBQ
Menu Selection
- Chicken Starters: 2 Varieties (e.g., Classic Tikka, Malai, or Haryali).
- Veg Starters: 2 Varieties (e.g., Paneer Tikka, Tandoori Mushroom, or Broccoli).
- Accompaniments: Fresh Mint Chutney, Laccha Onions, and lemon wedges.
Preparation
- Grill: Items finished live on a charcoal Sigri for smoky flavor.
- Marinade: Yoghurt-based marinades with Kashmiri chilli and ginger-garlic paste.
Live Pasta Cooking Station
Ingredients
- Base: Durum Wheat Penne cooked with mid-range Olive Oil (e.g., Figaro) and Butter.
- Sauces: Creamy White Alfredo (Amul Cream base), Tangy Red Arrabiata, or Pink Mix.
- Vegetables: Zucchini, Sweet Corn, Broccoli florets, Black Olives, and Tri-color Bell Peppers.
Service
- Cooking: Prepared fresh in a pan on induction/gas stove in front of guests.
- Condiments: Oregano, chilli flakes, and black pepper shakers provided.
