My Mushroom Thoran is a sleeper hit. Earthy, effortless, and unforgettable, it may sit shyly on the menu, but one bite and it steals the scene with its deep, savory flavor.

This is Vazhakoombu, or Banana Blossom Thoran, an unconventional delight. Made from the tender banana heart and cooked with green moong lentils, it has a unique texture and flavor that elevates any meal.
