A Sadya is a conversation of flavors. Here, I explain the different components, from the 'thottu kootans' (pickles) to the 'king of vegetables' and our signature chicken cutlets. It’s a tradition that evolves but always feels like home.

The three mainstays of any Sadya: Sambar, Pulisseri, and a tangy raw mango curry. Pouring these over rice creates a new flavor combination with every bite, a true dance of sweet, sour, and savory notes on the palate.
The dry vegetable preparations are key to the Sadya's texture. This image shows a variety of thorans (stir-fried vegetables with coconut) and a creamy Avial, a medley of vegetables in a coconut and yogurt gravy.
