This is the full picture of abundance. My Superfood Veg Sadya and Non-Veg UnSadya are designed to be a complete sensory experience. From the layout on the banana leaf to the blend of flavors, every detail is a tribute to King Mahabali's generous spirit.

A Sadya is a conversation of flavors. Here, I explain the different components, from the 'thottu kootans' (pickles) to the 'king of vegetables' and our signature chicken cutlets. It’s a tradition that evolves but always feels like home.

A closer look at the heart of the Sadya. You can see the mounds of rice ready to be mixed with flavorful curries, alongside portions of thoran, avial, and crispy cutlets. Each component is placed thoughtfully on the banana leaf.

The three mainstays of any Sadya: Sambar, Pulisseri, and a tangy raw mango curry. Pouring these over rice creates a new flavor combination with every bite, a true dance of sweet, sour, and savory notes on the palate.

The dry vegetable preparations are key to the Sadya's texture. This image shows a variety of thorans (stir-fried vegetables with coconut) and a creamy Avial, a medley of vegetables in a coconut and yogurt gravy.

The meal begins with these flavor starters. Tangy pickles, spicy chutneys, salt, banana chips, and a ripe banana awaken the palate and prepare you for the feast to come. The crispy papadum adds a satisfying crunch.

My Sadya On A Thali (SONATA) brings the full feast experience in a convenient format. It includes a curated selection of veg and non-veg dishes, from Avial and Kootu Curry to Mutton Pepper Roast, served in traditional brass bowls.
