When I started developing these recipes, my biggest challenge was keeping the texture right without eggs or refined sugar. My almond and chocolate chip cookies are vegan and gluten-free, but they still have that satisfying crunch and deep flavor you expect, so you are not sacrificing taste for health.
For a long time, 'healthy' felt like code for 'boring' or 'bland' in the dessert world. I wanted to change that. Whether you are managing gluten sensitivity, opting for a vegan lifestyle, or just trying to cut back on refined sugar, you shouldn't have to settle for something that doesn't feel like a proper treat.
My approach here is simple: I use real, clean ingredients. I rely on jaggery for a deeper, more natural sweetness in my wholewheat cakes, and I use high-quality flours for my gluten-free range.
