When I bake gluten-free or vegan, I don't just swap flour and move on. I use almond or jowar flour, which keeps things moist but naturally a bit more crumbly than standard sponges. It is a trade-off I am always upfront about because I would rather give you real, wholesome ingredients than hide them with excessive thickeners or stabilizers.
