The secret is in the time. Our '00' flour dough undergoes a 48-hour fermentation process before it ever touches our wood-fired oven. This slow rise creates that signature airy, leopard-spotted crust that is light, chewy, and holds the heat just right. It is not just about the bake, but the patience that goes into every single pizza we pull from the flames.
