It is the Raja Marcha, Axone, and bamboo shoots that make our food taste like home. These are the real, organic ingredients that go into every dish we serve.

This is Axone, or fermented soybeans, a key ingredient in Naga cuisine. It has a strong, pungent aroma and adds a deep, savoury flavour to pork and fish curries.

Today's special is Smoked Chicken, prepared in Nagaland. The chicken is smoked over a wood fire, which gives it a beautiful flavour and helps preserve it.

A display of some of the fresh, organic ingredients we use, including fiery Bhut Jolokia (king chillies), long beans, and aromatic ginger and galangal.

Here is Axone being prepared the traditional way, wrapped in banana leaves. This fermentation process is what gives it its unique and powerful flavour.

We never use mass-produced masalas because we want you to taste the same roots we grew up with back home. We bring the real taste of the Northeast to Mumbai, straight from our motherland. The magic is in the sourcing—we get our Axone (fermented soybeans) and Bamboo Shoot directly from back home because that is the only way to get the true, pungent kick that defines Naga and Manipuri cooking.

We avoid commercial powders and heavy oils. Instead, we rely on fresh ginger, garlic, and the natural juices of the meat to bring out the flavour.
