This is my Chef’s Special Assamese Till Pork Thali, a dish that truly represents the soul of Assam. The pork is slow-cooked with a rich, nutty paste of black sesame seeds, creating a deep, earthy flavor. Served on a traditional Kansa plate over a banana leaf, it comes with our house daal, a seasonal vegetable stir-fry, a fiery chutney, and steamed rice.

Our food is defined by what we call the 'bold, earthy trio': fresh fermented bamboo shoots, aged proteins, and locally sourced herbs. In Mumbai, you might be used to heavy gravies, but at Singju, we celebrate the ingredients themselves. Our dishes, like the Naga-style smoked pork or the Manipuri Eromba (a pungent, flavorful chutney made with fermented fish), are recipes passed down through generations.
We prioritize health without compromising on flavor. Every thali includes Chamthong or Kangsoi—our traditional, oil-free, water-based vegetable stews that balance the richness of the main curries.
