About Signature Sourdough Selection
The secret to my sourdough’s distinct tang and airy crumb isn't a shortcut, it’s time. Every loaf undergoes a 24 to 48-hour cold fermentation process, which deepens the flavor and makes the bread easier to digest. You are getting a preservative-free loaf that handles your morning toast and sandwich cravings without the heaviness of standard commercial bread.
My process begins with a wild yeast starter that I have nurtured over time. I skip all commercial yeasts and improvers, relying solely on natural leavening to build flavour and strength.

- Country Sourdough: This is my classic loaf, offering a rustic, hard crust and a soft, airy interior. It is the perfect everyday bread.
- 100% Wholewheat: For those wanting a heartier option, this loaf is dense, nutty, and completely free of refined flour.
- Gluten-Free Ragi: I use finger millet to create a gut-healthy, iron-rich loaf that does not compromise on texture.
