For my Calcutta Biryani, I use a flavorful blend of cinnamon, cardamom, cloves, and a closely guarded biryani masala for a special touch.

The foundation of a great biryani is fragrant Basmati rice, which I soak and partially cook to ensure a delightful texture.

It all begins with tender mutton, meticulously marinated and slow-cooked to perfection for my biryanis and curries.

The base of my famous butter chicken includes tomatoes, onions, cashews, and a blend of spices like garam masala, cumin, and kasuri methi.

The chicken for my butter chicken is first soaked in a delicious marinade of yogurt, lemon juice, and ginger-garlic paste.

I simmer the gravy until it forms a rich and aromatic sauce, ensuring each piece of chicken is thoroughly coated.
