Curious about what goes into your meal? We believe in total transparency. From hand-grinding our masalas to slow-cooking our gravies, this is exactly how we bring 'ghar ka khana' to your table.

A glimpse into our kitchen, where we prepare masalas from scratch and cook rice with fresh herbs. This is how we ensure every bite is full of flavor.

The simple, satisfying process of chopping fresh onions and serving a hot meal of sabzi and roti. This is the essence of our home-cooked food.

Watch our rich and thick Rajma gravy simmering in a large pot. We slow-cook our dals to bring out the deepest flavors.

Preparing our popular Gobhi Masala. We lightly fry the cauliflower and potatoes before mixing them with our signature spice blend.

The first step to many of our delicious gravies is frying finely chopped onions until they are perfectly golden.

About this collection

Most commercial kitchens hide their process, but we want you to see it. Whether it is the hour-long simmer for our Butter Chicken gravy or hand-chopping fresh seasonal greens for our Sarso da Saag, nothing here is pre-made. When you order from us, you get a home-cooked meal prepared exactly the same way I would make it for my own family.

Transparency is the core of DefCol Rasoi. We source everything fresh, starting with the vegetables. I personally handpick the produce and grind our spices because the flavor difference is real. You won't find commercial spice mixes, preservatives, or stale batches here.

  • Slow Cooking: Our Dal Makhani and gravies like Butter Chicken simmer for hours to develop deep, consistent flavors. We do not take shortcuts.
  • Seasonal Focus: In winter, you will find us prepping fresh Sarso da Saag using hand-cut mustard leaves, spinach, and bathua.
  • Quality Control: Cooking in pure (shudh) desi ghee isn't just a claim. It makes the food light on the stomach and keeps it healthy for your guests.
