Most places rely on frozen supply chains, but I believe the soul of a good momo is in the dough-to-filling ratio. By hand-rolling them right here in my Andheri West kitchen, I ensure the wrapper stays thin and delicate, never rubbery. We do not stock anything for later. If you want a fresh momo, that is exactly what you get.
