About The Plats Playground
When you visit during our Tuesday sessions, you are often trying a dish that might be on our full menu next month. It is a chance to taste a work-in-progress, like a new botanical cocktail Atul is currently balancing or Chef Tharun’s latest take on a classic stroganoff.
The Plats Playground is not about perfection. It is about the raw excitement of discovery and the quiet choreography of a kitchen in motion. We use these sessions to test how ingredients behave—how a specific milk clarification can change the mouthfeel of a cordial, or how fat-washing a spirit with coconut oil alters the finish of a drink.
Located in Malviya Nagar, our space transforms on these days. It becomes a testing ground for ideas gathered from our travels, like that perfect Bánh Mì we found in a small Vietnamese eatery, or the way a simple marigold infusion can change the profile of a gin. We invite you to be part of this process. You might find a cocktail featuring black garlic miso or a dessert that explores the contrast between sweet and savory.
