My millet and jaggery cookies don’t rely on processed sugar or refined flour, which means they behave differently than commercial biscuits. They offer a rustic, denser crunch rather than a light, airy snap. Why 'From-Scratch' Matters
I have been baking for over 30 years, and I’ve learned that there is no room for 'andaze' (guesswork) when you are working with whole grains and natural sweeteners. Baking is a science. When you take out the maida and processed sugar, you have to understand how every ingredient interacts—how millet flour holds structure, how jaggery caramelizes differently than white sugar, and why pure butter is non-negotiable.

This cluster is for those who want to indulge without that heavy, sluggish feeling that comes from preservatives and artificial additives.
- Millet & Jaggery Cookies: These are my go-to for a healthy tea-time snack. They have a deep, earthy flavour profile that pairs perfectly with a strong cup of chai or coffee.
- Oatmeal Fudge Bars: These are about balance. I use the hearty, fibrous base of oats to give you energy, and then add a layer of rich, pure chocolate fudge because life is too short for joyless food.
- Almond Florentines: These are a labour of love. We make delicate, crispy lace cookies using almonds and sandwich them with pure dark chocolate. It’s a texture experience—crisp, chewy, and decadent.

Everything you see here is baked fresh in my Mulund West kitchen. I don’t use premixes, so consistency comes from my team’s careful weighing and testing.
