My process for seasonal specials is identical to my signature bakes: no premixes, no preservatives, and absolutely no artificial essences. If it is a Christmas fruit cake, the fruits are soaked for weeks. If it is a Ganesh Chaturthi treat, the Modak Pie is a balance of traditional coconut-jaggery and a buttery, pie-crust shell.
