Concept cakes are so much fun to make. This one was for a McDonald's fan, complete with fondant nuggets and fries on a rich cheesecake. It's all about celebrating what makes someone happy.

A special birthday cake for a dad, decorated with macarons and delicate white chocolate swirls. Even with a simple theme, I focus on elegance and delicious flavour.

When you order a Basque cheesecake from me, you will notice the top is deeply caramelized. That char is intentional—it is the result of precise heat management, not a mistake. It creates a necessary bitter contrast to the silken, creamy center. I do not use shortcuts or heavy stabilizers to force a set, so the balance between that crust and the heart is entirely about timing and temperature.

Baking, to me, is a science. When you see a cake or cheesecake in this collection, what you are looking at is the result of thirty years of testing. I do not use pre-mixes, artificial thickeners, or pre-made sponges. Whether it is a multi-layered Crème Brûlée chocolate cake or a custom theme cake, the structure is built by balancing ingredients, not by relying on preservatives to make them last longer.

I treat every custom order like a project. If you have an idea—a specific theme, an inside joke for a birthday, or a flavor combination you love—I figure out how to bake it. I have done McDonald’s-themed cakes with fondant nuggets and elegant birthday cakes topped with handmade macarons.
