I do not believe in sacrificing taste just to keep things healthy. When I bake with jowar flour or substitute refined sugar with jaggery, I spend weeks adjusting the ratios until the texture is just as moist and fudgy as my classic recipes. Why my healthy bakes taste different
Most healthy desserts fall into the trap of being dry or flavorless because they rely on mass-produced premixes. I do things differently:
- Real Swaps, Real Results: I use jowar (sorghum) flour and almond flour instead of maida, and pure jaggery or natural substitutes instead of refined sugar.
- No Synthetic Fillers: My recipes are free from preservatives. If a cake calls for chocolate, I use couverture dark chocolate. If it needs sweetness, it comes from fresh fruit or jaggery.
- The Texture Test: The biggest challenge with flourless or millet-based baking is the texture. I have spent years perfecting my brownies and cakes so they remain soft, fudgy, and decadent, even without the traditional pantry staples.
