About Our Philosophy: Quality & Passion

You won’t find generic wholesale ingredients in my kitchen. I source my coffee beans directly from 7 Beans Coffee Company and my fresh vegetables from Farm Theory, ensuring that the flavor you get is exactly what the producer intended. When you eat here, you are tasting ingredients that have been tracked from the farm to your plate, handled with the same care I put into my sourdough.

The Zed Certified Standard

When I started in 2018, I had a simple goal: bring real, artisan French baking to Bengaluru without cutting corners. Over the years, this has evolved into the "Zed Certified" standard. It’s a playful nod to official certifications, but it represents something very real to me. It means I personally vet the suppliers for our butter, eggs, and produce.

Why Ingredients Matter

I believe you can taste the difference when you use organic, farm-fresh eggs from Kegg Farms or the creamiest butter from trusted dairies like Nandini. In my Indiranagar kitchen, there is no place for mass-produced fillers. Whether it is the flour in our pastries or the vegetables in our dinner steaks, every component is chosen for its specific flavor profile and freshness.

More Than Just a Bakery

While my roots are in artisan bread and laminated dough, the philosophy remains the same as I’ve expanded into all-day dining and evening steakhouse service. I apply the same meticulous attention to detail to a medium-rare lamb steak as I do to a pain au chocolat. My kitchen focuses on small batches because it allows me to maintain that consistency and quality. When you dine with me, you are not just getting a meal; you are getting the result of years spent sourcing, testing, and refining my recipes to bring you a piece of my vision in every bite.
