I believe in letting the season dictate the menu. These cakes are layered with fresh, hand-picked fruits and house-made compotes, never heavy on the cream.

This fresh mango cream cake was a special order, inspired by my grandmother Shireen's recipe. Each bite carries the warmth of cherished memories and the sweetness of peak-season mangoes.

About Fruit-Forward Cakes

My secret is patience with fruit. I don't use store-bought preserves or generic fillings. Instead, I spend hours reducing fresh berries, mangoes, or pineapples into intense, house-made compotes that I layer between soft, moist sponges. This ensures you taste the real, punchy fruit in every bite, rather than just sugar or heavy cream.

Baking with the Seasons

When you order a fruit cake from my bakehouse, you are getting a snapshot of the current season. If it is mango season, those are real Alphonso chunks you are tasting, not a generic syrup. I design these cakes to be 'naked' or 'semi-naked' to keep the sponge-to-cream ratio balanced. Whether it is the zesty tang of my Lemon Basil cake or the tropical notes in my Coconut Pineapple creation, the focus is always on the produce.

Why My Process is Different

  • House-made Compotes: I make all fruit reductions from scratch to ensure the flavour profile is bold and authentic.
  • Minimalist Design: I use fresh herbs, edible flowers, and the fruits themselves to decorate. There is no artificial fluff here.
  • Customisation: I understand that celebrations happen year-round. If you need an eggless version or a specific fruit preference, let me know, and I will do my best to source the freshest produce for your date.

A Quick Note on Ordering

Because I source everything fresh, these cakes are strictly pre-order. I do not have a freezer full of pre-made bases. This ensures that when you cut into your cake, the fruit is as fresh as it can be. Please reach out at least 24 hours in advance so I can ensure I have the best quality produce available for your cake.
