About Lighter Fare & Fruit Cakes

I don't use heavy fondant for this collection because these cakes should be about the fruit and the sponge, not sugar paste. When you order one of these, you are getting a cake that balances a light, airy base with seasonal toppings like fresh mango, kiwi, or dragon fruit, all finished with a smooth fresh cream or a clean mirror glaze.
