About Spirited Indulgences
The balance is everything. I don't just drizzle the liqueur on top; it is incorporated into the rich ganache and soaked into the sponge, ensuring that warmth carries through every single forkful without the frosting becoming overly sweet or heavy.
When I decided to add a 'spirited' range to the menu, I wanted to avoid the mass-produced taste often found in alcohol-infused desserts. You will not find any pre-mixes or artificial essence here. Instead, I use genuine Bailey's Irish Cream, letting its notes of cream and cocoa play off the 54% dark couverture chocolate sponges.
Because I work out of my home bakehouse, every cake is made to order. This allows me to control the moisture levels in the sponge, ensuring it remains soft even after being soaked in the liqueur.
Why this works:
- Real Ingredients: I use high-quality couverture chocolate, not compound, which makes the ganache silky and melt-in-the-mouth.
- Less Sugar, More Flavour: By focusing on the quality of the cocoa and the cream, I can dial down the sugar, making this a cake you can actually enjoy more than a single slice of.
- Freshness: Since I don't keep stock, your cake is baked specifically for your delivery window.
Please keep in mind that these cakes require a little extra planning. I need at least 48 hours to prep the sponges and let the flavours mature before delivery. Whether it is an intimate birthday or just a weekend dinner at home, these cakes are designed for those who appreciate the slower, more indulgent side of dessert.
