About Meat & Seafood Delights
Because I do not use artificial preservatives or stabilizers, these meat pickles must be made fresh for you. When you order, I start the preparation, which is why I need a 24 to 48 hour heads-up to get everything perfect. It is the only way to ensure the meat texture stays right and the flavours remain as bold as they should be.
Why small-batch matters
When you are dealing with proteins like mutton, pork belly, or prawns, there is no room for mass-produced methods. If you rush it, you get rubbery meat and artificial aftertastes. In my kitchen, I focus on the protein to masala ratio. Whether it is the slow-cooked bacon jam or a spicy prawn achar, you get a jar packed with actual pieces, not just oil and spices.
What I make
- Bacon Jam: This is my favourite. It is slow-cooked with onion, vinegar, and brown sugar. Spread it on crusty bread or add it to a burger for a smoky, sweet finish.
- Meat Pickles: I do boneless mutton, diced pork belly, and chicken, all marinated and cooked until tender.
- Seafood: Prawn and squid pickles are seasonal, so availability changes depending on the market.
How to order
Everything is made-to-order in New Friends Colony. Since I do not use chemical stabilizers, please plan ahead. Let me know what you need 24 to 48 hours in advance so I can have your jar ready for pickup or shipping across India.
