When you book an in-home dinner, I manage the logistics from ingredient sourcing to service. You provide the dining space; I bring the linens, glassware, and the meal itself. We focus on a five-course progression that allows me to interact directly with your guests, sharing the stories behind every plate I serve.
My approach to the dining table is rooted in French technique. During these events, I avoid shortcuts. I prepare every component, from the chicken jus to the house-made bread, in my own kitchen before arriving at your venue. For in-home services, I request a minimum of six guests to ensure the flow of the five-course sequence remains smooth. I focus on seasonal market ingredients, such as smoked duck or local mushrooms, which changes based on availability. If you prefer to dine at my residence, the supper club format offers a communal table where guests share the meal in a setting designed for conversation. My training at L'Auberge du Pommier in Toronto influences how I frame each course, treating ingredients with respect rather than masking them with heavy sauces. Alcohol is typically not included, so feel free to bring wines that pair with the specific menu we discuss.
