Signature 5-Course In-Home Fine Dining
The Culinary Journey
- Menu Structure: A bespoke 5-course tasting menu curated by Chef Clive (Amuse-bouche, Appetizer, Pasta/Entrée, Protein Main, Dessert).
- Premium Ingredients: Usage of high-stakes ingredients such as Magret Duck, Pan-roasted Quail, Imported Tenderloin, Truffles, or Morels.
- Technique: Complex pastry work, textures (crumbs, gels, mousses), and artisanal house-made breads (Fougasse, Sourdough) with flavored butters.
Service & Experience
- Chef Presence: Chef Clive personally cooks, plates, and presents dishes at the table with storytelling regarding ingredient origins.
- Staffing: Includes Head Chef and kitchen assistants (commis) for preparation and flow.
- Aesthetics: Fine-dining plating using tweezers, foams, edible flowers, and micro-greens.
Logistics
- Cleanup: Kitchen workstation and utensil cleaning included.
- Exclusions: Alcohol (BYOB), Waitstaff for pouring/clearing, and specific fine-dining crockery (client provides unless arranged otherwise).

- Modern European Classics: Options include Steak & Eggs (Coffee Tenderloin), Bacon Pain Perdu, Saucisson En Brioche, or Wild Mushroom Tartine.
- Bakery: Includes homemade brioche and artisanal breads.
Execution
- Preparation: Food prepared with professional techniques (sous-vide, curing) despite the casual format.
- Service: Plated service (not buffet) by Chef Clive or a Senior Sous Chef at your location.
- Logistics: Chef handles ingredient sourcing, transport, and basic kitchen cleanup post-service.

- Fixed Menu: A pre-set seasonal 5-course Modern European tasting menu (no customization).

- Inclusions: Welcome drink (mocktail/palette cleanser) and still/sparkling water.

- Location: Chef's private residence in Bangalore styled as a pop-up restaurant.
- Setting: Communal dining (approx. 8-10 people) with professional table settings, runners, and floral centerpieces.
- Interaction: Open format allowing direct conversation with the chef about food and techniques.
- Alcohol Policy: BYOB (Bring Your Own Bottle) is permitted for wine pairing.

How It Works
You can choose to host a private dinner in your own home, where I’ll show up with my crew and turn your familiar space into a fine-dining spot. Or, you can book a table at my residence in Bangalore for a proper chef’s table vibe. Either way, expect the whole setup - fancy tableware, good glassware, and music that lifts the mood.
The Food
Every event gets a bespoke tasting menu experience, usually five courses, each dish plated up with a bit of drama and a story. I talk you and your guests through the menu, sharing what goes into each plate and why it’s there. I pay as much attention to custom vegetarian tasting menus as I do to the non-veg stuff. Think duck cured in five spice, salmon tartare, or my favorite mushroom creations.
