Our Thattukada Prawns are a signature classic. Juicy, fiery, and charred just right, they are kissed with coconut oil and loaded with spice that doesn’t wait for permission. This is Kerala’s street-style heat, plated for the bold.

Our legendary Syrian Buff Roast is a culinary heirloom. We slow-roast tender cubes of buff and coconut slivers in a fragrant Nasrani masala blend, creating a signature dark, caramelized hue and a deeply smoky aroma.

This is our Kovalam Smoky Roasted Chicken. The chicken is marinated in traditional stone-ground spices and smoke-cooked, Chuttathu style. Each piece is packed with robust, spicy flavours, making this dish absolutely drool-worthy.

Just dropped on our menu, this Pepper Chicken Fry is inspired by the local Trivandrum Chaayakada. It's a seriously-peppery, batter-fried delight infused with my special secret masala mix for an unbelievable Mallu kick.

As a special for my birthday week, I created these chicken wings drenched in my special inji puli sauce. They are pan-fried for a crunchy surface and spiced inside, with a gingery, spicy, sweet, and sour taste.

Tiny potatoes, big attitude. This is our Kerala-style potato roast, a bold and beautiful side dish where small potatoes are tossed in a fiery, flavourful masala.

Our raw banana roast is cooked with a bold chilli paste and a cheeky umami kick. There's no dryness, just a perfect cling of masala and fiery flavours that will keep you coming back for more.

Our Nasrani Prawns are lightly sautéed with everyday masalas and cooked just enough to retain their juicy softness. It's an uncomplicated, homestyle dish that reminds us of the pure love of a mother's cooking.

Our Syrian Christian Pork Pepper Roast on toast is where toddy shaap swagger meets bar-side bite. Fiery, pepper-laced pork fry is served on toast for a crunchy, delicious snack.

These are our Prawn Pataka Vadas, crispy, prawn-packed, and exploding with Kerala masalas. These spicy, savoury doughnuts are straight out of our playbook of flavour-indulgence.

About Signature Roasts & Fries

Our roasts are not about drowning meat in gravy. We slow-cook every portion in small batches using pure coconut oil, allowing the home-ground spices to caramelize and cling directly to the protein. This creates the smoky, charred finish that you usually only find in the backstreets of Kerala.
