When winter arrives, I love making my Gobi, Gaajar, Shalgam Achaar. This pickle is a crunchy, tangy mix of fresh cauliflower, carrots, and turnips, all pickled in a traditional Punjabi style. It’s a seasonal favourite.
My Karonda ka Achaar offers a unique tangy twist. This traditional Indian pickle, made from the karonda fruit, has a bold flavour that can spice up dal-rice or add a special zing to your parathas.
About this collection
I make these only when the produce is at its peak. The winter mix relies on a jaggery and vinegar base for that perfect sweet-sour balance, while the rare karonda requires a specific, pungent spice blend to bring out its zesty kick. Because I don't use artificial preservatives, every jar is a small, fresh snapshot of the season.
For me, cooking has always been about following the rhythm of the seasons. When winter hits, my kitchen changes entirely. That is when I source fresh cauliflower, carrots, and turnips for my Gobi-Gajar-Shalgam achaar. Unlike my year-round staples, this one uses a jaggery and vinegar base rather than oil, which keeps the vegetables crunchy and gives it that unique sweet-and-tangy profile that pairs so well with warm parathas.
Then there is the Karonda. It is a rare, small fruit that packs a punch, and it is quite labour-intensive to clean and prepare. I pickle it with a blend of hand-ground spices to bring out a bold, zesty flavour. It is not something you find in every store, and that is exactly why I love making it.
I keep these batches intentionally small. This ensures that you get the most authentic taste without needing to rely on artificial additives or preservatives.
