We don't rush the process. After hand-chopping the fresh carrots, cauliflower, and turnips, we leave them to dry in the sun for hours. This step is the secret to that signature crunch you miss from home. It takes patience, but it is the only way to get the texture right—no shortcuts, just the traditional way.

The Gajar Gobhi Shalgam pickle is a true winter comfort. We look forward to this season specifically to source the freshest 'dilli wali gajar' (Delhi red carrots) and crisp cauliflower florets.

Since this is a seasonal offering, we only prepare it in small batches to ensure the spice-to-oil ratio remains perfect. We use a traditional mustard oil base which acts as a natural preservative, giving the pickle a shelf life of 12 plus months even without any added chemicals.
