My Featured Cakes, 3D Sculptures, and Edible Art

A showcase of the projects that pushed my limits. From hand-sculpted 3D figures to intricate wedding tiers, these are the bakes I'm most proud of.

This two-tiered dinosaur cake was a blast to make for a 5th birthday. It features a hand-painted T-Rex, a sculpted dragon topper, and fluffy fondant clouds against a sunset.

This is the biggest wedding cake I've made, weighing 25 kgs! It's a five-tier masterpiece with Dutch truffle and rum plum cake, decorated with handmade wafer paper peonies and delicate gold leaf accents.

This fully edible bust was a huge learning experience for me. I sculpted the face and features from chocolate, creating a piece of art that's as delicious as it is detailed.

I love when a cake becomes a canvas. This two-tiered cake features a hand-painted Native American portrait, complemented by edible wafer paper feathers and a base of handmade sugar roses.

It's not just a bag, it's a Dior cake! This sculpted Black Forest cake is designed to look like a classic Dior shopping bag, complete with a cascade of red buttercream ruffles.

A birthday cake that looks like a bouquet of flowers. I arranged a variety of handmade sugar flowers, including roses and peonies, to create this vibrant and elegant floral display.

Cocomelon is always a favorite for first birthdays. This cake features the iconic Cocomelon TV screen with JJ and his animal friends as handmade fondant toppers.

About this collection

When I take on a 3D sculpted cake, it is not just baking; it is engineering. Every piece requires serious internal structural planning to survive the winding Darjeeling roads, using high-density ganache and food-safe armatures to ensure your design arrives exactly as we planned it. I started learning to bake from YouTube videos in my kitchen, and now I am obsessed with the details that turn a simple sponge into a piece of art. This collection is my 'greatest hits'—the cakes where I really got to experiment.

Why I Love the Tricky Stuff

Baking in Darjeeling comes with its own set of rules. I have learned the hard way that temperature and travel are everything. Whether I am hand-painting a portrait on wafer paper or stacking a five-tier wedding cake, I build these to travel. I use specific techniques like center doweling systems and chocolate ganache undercoats, not just for looks, but for stability.

My Craft

  • 3D Sculpting: This is where I really get to nerd out. Whether it is a handbag, a cartoon character, or a life-sized object, I carve the cake, structure it with dowels, and then wrap it in ganache. It is labor-intensive, but seeing the look on your face when you realize it is actually cake makes the late nights worth it.
  • Hand-Painting: I treat the fondant like a canvas. I use edible paints to create portraits, landscapes, or patterns. It is messy, but it is one of the most personal ways to tell your story.
  • Sugar Floristry: For weddings, I focus on botanically correct flowers. Peonies and roses made from sugar paste take time, but they last forever as a keepsake from your big day.
