About Buttercream, Drips & Floral Designs
Buttercream cakes are my personal favourite for a reason. I use Swiss Meringue Buttercream because it handles our Darjeeling climate better than standard cream, giving you a smooth finish or sharp piping that holds its shape. Whether you prefer fresh blooms or my hand-piped sugar flowers, I focus on the little details that make the cake feel like a piece of art.
It is not just about the look. When I work with buttercream and drips, I am thinking about how the cake will hold up from my kitchen in Manbari Basti to your venue.
The Finish
My drip cakes use a ganache that is rich but stable. I balance the sweetness of the sponge with the texture of the frosting. If you choose fresh flowers, I make sure they are food-safe and prepared to stay fresh until the first slice.
Hand-Piping
Those intricate buttercream roses you see in my gallery take time. I hand-pipe each one. It is a bit of a workout for my wrists, but seeing the final arrangement on top of a tiered cake is worth it.
Logistics
Transporting tiered cakes in the hills is no joke. I use internal doweling and reinforced boards to make sure your cake arrives in one piece, even on the winding roads around Darjeeling.
