My Baking Journey: Behind the Scenes of Custom Cake Art

People often see the finished cake, but here is the reality. It is about late nights, constant training, and the messy process of learning to sculpt. This is my journey behind the apron.

I was so humbled and grateful to be selected as one of the Top 50 home bakers in India. Receiving this award was a magical feeling and makes all the long hours of hard work feel worth it.

This video shows the process of creating a complex chocolate display. It involved tempering chocolate, sculpting, and creating delicate chocolate flowers. I even dropped it at the end, but that's all part of the learning process!

A look into one of my favorite weeks at pastry school, where we created this advanced sugar display. We worked as a team to build this incredible Genie sculpture entirely out of sugar.

From YouTube Videos to Professional Training

Baking started as a hobby, watching endless videos in my kitchen. I realized pretty quickly that if I wanted to do more than just simple sponges, I had to get serious. I started seeking out masterclasses to learn advanced techniques like sculpting realistic faces and crafting delicate sugar flowers. Being named one of India's Top 50 home bakers was a huge moment, but the real reward is what I learned along the way.

The Art of Sculpting

Sculpting with fondant and chocolate is not for the faint of heart. It involves structural engineering, patience, and a lot of 'oops' moments before getting it right. Whether I am carving a cake into a specific shape or hand-painting details onto a tier, I use professional-grade supplies like Vizyon or Satin Ice fondant to make sure the structure holds up, especially given our hill weather here in Darjeeling.

Why Process Matters

When you see these photos, you are looking at weeks of practice and careful planning. I treat every order, whether it is a small birthday cake or a grand wedding centerpiece, with the same focus. I care about the structural integrity as much as the flavor, which is why I use high-density ganache and sturdy dowelling systems. It is not always easy, and sometimes the roads to delivery are a challenge, but seeing a client's reaction makes every late night worth it.
