Forget the 'Veg Kolhapuri' you see in restaurants. This is the real deal—zhanzhaneet curries, Pandra Rassa, and recipes straight from my Aai's kitchen in Kolhapur.

A close-up of my authentic Kolhapuri Thali. It features Bharlela Vanga (stuffed eggplant), spicy chicken curry, Pandra Rassa (white broth), and fresh koshimbir. This is the real taste of Kolhapur, far beyond just the spicy red curry.

The simple joy of a perfect meal. This plate features my Kolhapuri Mutton Locha (pickle) with soft Bhakri, lasun nariyal chutney (garlic coconut), and spicy kharda. This was from a pop-up at Folk in Kalaghoda, a truly happy memory.

Our thalis getting ready to be served at a busy pop-up. Each plate is carefully assembled with a mound of Indrayani rice, different curries, and fresh accompaniments, all served on a traditional banana leaf for that authentic touch.

This is a memory from a place called Nupur in Kolhapur, which serves the most amazing home-style thali. It inspired my own Mutton Kolhapuri Thali, complete with mutton masala, mutton fry, Tambda and Pandra Rassa, and keema.

A thali from one of my dining experiences, where guests get to lick their fingers clean. This one had a mix of dishes like Bharlela Vanga, Kolhapuri Chicken Sukkha, and even Malabari Parotta. It’s all about enjoying the food without any hesitation.

My version of the ultimate Kolhapuri thali, featuring a little bit of everything. You get Chicken Kale Sukkha, Mutton Chops, Chicken Kolhapuri Masala, and even Mutton Loncha. It's a feast for one, but sharing is at your own risk!

About The Kolhapuri Thali Experience

A true Kolhapuri thali is all about the balance between the fiery Tambda (red) rassa and the cooling, aromatic Pandra (white) rassa. When you join me for a pop-up, you aren't just getting spice; you are getting a complete meal cooked with my own house-ground masalas and fragrant Indrayani rice that defines proper ghar ka khana.

My pop-ups are a chance to experience the food I grew up with, far removed from the generic, overly spicy gravies often sold as 'Kolhapuri' in the city. When I host a thali experience, I focus on the zhanzhaneet (vibrant) flavours that define our region.

What makes my thali different?

  • The Rassa Duo: You will always find the essential pairing of Tambda Rassa and Pandra Rassa on your plate. One brings the heat, the other brings the comfort.
  • Authentic Ingredients: I use local staples like Bharlela Vanga (stuffed eggplant), freshly pounded Thecha, and Indrayani rice, which has a distinct sticky texture and aroma.
  • Regional Variety: While my heart lies in Kolhapur, my travels often influence the menu. You might see coastal touches or ingredients I picked up during my time in Coorg or Kerala, making every pop-up menu unique.

These pop-ups are intimate, homely affairs. Because I host these at partner venues or my home, the seating is limited. This allows me to share the stories behind the recipes—where the masalas come from, memories of my Aai in the kitchen, and why we cook certain dishes for festive occasions.
