When you order my Mutton Paya, know that it is a slow-cooked labor of love. Because the broth needs hours of simmering to reach that perfect, gelatinous consistency, I ask that you place your orders at least 24 hours in advance so I can prepare it fresh from scratch without any shortcuts.
