In Kerala, we make cutlets out of everything, but my heart belongs to beef cutlets. Crispy on the outside and tender on the inside, they are a must-have appetizer for any event. I serve them with my special homemade ketchup.

No party is complete without a bowl of my famous beef cutlets. They are the perfect two-bite snack. I also make them with fish, mutton, chicken, prawn, mushroom, or mixed vegetables to suit all your guests.

For my 'Breaking Lent' course, I served a comforting congee with legume and a dry prawn chutney. Presenting dishes in individual portions like this is a great way to serve appetizers at a standing party or a multi-course meal.
