About European-Style Cakes & Pastries
Most places use cheap compound chocolate for their glazes and mousses, which leaves a waxy film in your mouth. We refuse to do that. Whether it is our layered Coffee Opera or the rich Chocolate Sacher, we only use pure couverture chocolate. You get a clean, intense flavour that actually melts, not just sits there.
My obsession with getting European-style pastries right started when I couldn't find a slice in Bengaluru that didn't feel like mass-produced sponge cake. Real patisserie is about layers, textures, and precision.
Our Coffee Opera is a labour of love—we layer almond sponge with coffee syrup, coffee buttercream, and dark ganache to get that exact balance of bitterness and sweet. For the Chocolate Sacher, we keep it true to the Viennese classic, using a hint of apricot to cut through the density of the chocolate sponge and the glossy glaze.
We also do the ones you grew up with, like our Black Forest, but we make sure the cherries are tart and the cream is light, not heavy. These aren't just 'sweet treats'; they are slices of craft. We bake in small batches at our outlets in HSR Layout, Kalyan Nagar, and Indiranagar to ensure that the texture stays perfect for delivery across Bengaluru. If you have a coffee craving or just want a quiet dessert after a long day, these are the slices that actually hit the spot.
