You won’t find heavy fondant on my cakes. I focus entirely on the structure—like the distinct honeycomb layers of my viennoiserie or the mirror glazes on my entremets—using high-fat European-style butter to ensure the taste and mouthfeel are the true highlights of every dessert.
My approach to French pâtisserie is simple: patience and high-quality ingredients. Whether it is a classic Opera cake with its layers of almond sponge and coffee buttercream or a delicate seasonal fruit tart, I do not cut corners. The pastry creams are cooked in small batches, and the fruit compotes are reduced slowly to capture the actual flavor of the season, be it fresh strawberries or mangoes.
I prefer the natural look of a dessert. You will see this in the velvet sprays on my entremets, the dusting of cocoa on a Tiramisu, or the glossy finish of a fruit tart. These methods allow the quality of the components to stand out. When you order a cake, you are getting something made from scratch in my kitchen, not a product that has been sitting in a freezer.
Because I use natural yeast and precise flour types like T45 and T55, the integrity of the bake is different from standard commercial cakes.
