From flipping idlis to perfecting the ultimate fudgy brownie. This is how a simple craving in Bengaluru turned into our mission to bake with only real chocolate and butter.
From selling idlis for 20 years to baking brownies, my journey has been driven by a love for good food. This is a short intro to our story and how it all began.
Every story has a humble beginning. Ours started with just me, my chef, a small space, and an old oven, but we had a shared vision to build something special.
Finding the perfect recipe was a journey in itself. After tasting dozens of brownies, my chef created 15 amazing varieties on the first day, and I knew we were onto something.
In the early days, it was all about the hustle. I took orders on Instagram and delivered even single brownies myself, all driven by word-of-mouth and customer feedback.
I learned early on about the difference between compound and couverture chocolate. We made a choice to always use pure couverture and real butter, because taste and quality are non-negotiable for us.
We started online, but customers wanted a physical space. Opening our first outlet in 2021 was a huge step, and after a slow start, your support made it a success.
I invented cake tubs to solve the problem of smashed delivery cakes. It gave us the freedom to experiment with indulgent layers of flavor, and they quickly became a bestseller.

The pivotal decision wasn't just about baking brownies, it was about the ingredients. When most others switched to vegetable-fat based compound chocolate to keep costs low, we made a non-negotiable rule, only pure couverture chocolate. That choice is exactly why our brownies have that signature rich, dense texture that does not feel like a standard cake.
It started in a tiny kitchen during the lockdown. I was an ex-founder of an idli shop, tired of seeing brownies that were just dry chocolate cakes. My chef Sanjay and I had one old oven, limited space, and a shared obsession, to recreate a brownie that was actually gooey, rich, and dense.
We spent weeks tasting the best brownies in Bengaluru, shortlisting flavors, and iterating. Our first breakthrough was ignoring the industry norm. Using pure couverture chocolate, with high cocoa butter content, was more expensive than the common vegetable-fat compound chocolate, but it was the only way to get that authentic flavor.
Our growth was entirely customer-driven. We started by taking Instagram DMs and delivering single brownies by hand. When customers kept asking for more, birthday cakes, tiramisu, cake tubs, we just listened and added them to the menu. That is how our Cake Tubs were born. We noticed people were frustrated by cakes getting smashed during delivery, so we put those indulgent layers into secure, spoonable tubs.
Today, The Brownie Circles has grown to multiple outlets across Bengaluru. We still use that same recipe, the same commitment to real butter and couverture, and we still listen to every piece of feedback. Whether you are ordering a box of signature dark chocolate brownies or a seasonal mango-misu, you are getting the same quality we fought to establish in that first kitchen.

I am Gautam, and I do not believe in taking shortcuts with ingredients. If it is not made with real butter and pure couverture chocolate, it does not leave my kitchen. I started this to fix what I saw missing in Bengaluru’s dessert scene, and I am still just as obsessed with the texture of every brownie we bake.
