I bring forty years of Spanish culinary tradition straight to New Delhi. My kitchen is my story, where every dish is cooked with cariño—my grandmother's secret ingredient for everything I do.

Using the brick oven is one of my favorite cooking methods. It gives a unique, rustic flavor to breads and other dishes, just like in the old kitchens of Spain.

When you step into my kitchen at Sevilla, you are not just ordering a meal. I personally oversee our paella pans and the brick oven, ensuring the saffron and olive oil arrive at your table with the same intensity I grew up with in Spain. My approach to food is simple: Ponemos cariño a las cosas—we put love into things. This philosophy comes from my abuela's kitchen, where I first learned that the best meals are built on memories, not just recipes.

The Spanish Culinary Process

My technique is rooted in the traditional methods I mastered over four decades. When I prepare a Paella, I am looking for the socarrat—that perfect, caramelized crust at the bottom of the pan that only comes with patience and precise heat control. I refuse to take shortcuts with ingredients. The saffron, the cured meats, and the fresh seafood are the foundation of my cooking. Whether it is a shared platter for a family gathering or a private dinner in our outdoor cabanas, I treat every plate as if it were coming out of my family's restaurant.

Located at The Claridges, our space is designed to be an extension of my homeland. You will find that the brick oven provides a rustic flavor you cannot replicate in a standard kitchen, which is why I use it for everything from bread to specific meat preparations.
