About Cake Fundamentals & Frosting
You will not just watch me bake. In my studio, we get hands-on with real ingredients, practicing the crucial crumb coat and learning why your whipped cream might collapse in the humidity. We use professional scrapers and turntables to achieve those sharp, 90-degree edges, and I will teach you how to troubleshoot your home OTG for the perfect rise every time.
Why Baking Science Matters
Many home bakers struggle because they treat recipes like magic formulas instead of chemistry. In this class, we move past the guesswork. Whether you are using a standard OTG or a convection oven, we cover temperature calibration and rack positioning to ensure your cakes rise evenly without burning.
Mastering the Sponge
Everything starts with a stable base. We focus on creating vanilla and chocolate sponges that are light yet sturdy enough to hold up to stacking and heavy frosting. You will learn to identify the exact point of gluten development and how to manage the mixing process so you never end up with a dense, gummy cake.
The Finishing Touches
Frosting is where art meets stability. We tackle two distinct challenges in this workshop:
- Weather-Resistant Whipped Cream: In cities like Cochin and Bangalore, humidity is the enemy of beautiful cakes. You will learn how to stabilize your cream so it holds its shape during transport and celebrations.
- Sharp Edge Finishing: Achieving that clean, 90-degree angle on a cake is a game-changer. We practice the palette knife movements and frosting techniques needed for smooth, seamless sides.
From the initial crumb coat that locks in moisture to advanced nozzle work for rosettes and borders, you will leave with the skills to make cakes that taste as good as they look.
