- Manual Lamination: This is the heart of our advanced masterclass. We teach you to fold butter into dough by hand, ensuring distinct, flaky layers without the need for industrial equipment. We cover temperature control, preventing butter leakage, and the patience required for a perfect proof.
- Dough Science: Ever wonder why your pizza base is tough or your bread is dense? We dive into gluten development, window-pane testing, and moisture ratios. You will learn to work with your dough rather than fighting against it.
- Versatile Savory Bakes: From scratch-made pizza bases with that perfect chew, to braided Pesto Babka and pull-apart garlic breads, you will leave with a repertoire of savory bakes that impress at any gathering.
Where We Bake
We run our core studio workshops in Kakkanad, Kochi. We also frequently host pop-up classes in Indiranagar, Bangalore. Each session is kept to a small batch size to ensure you get direct feedback while you knead, shape, and proof your dough. We provide all the ingredients and equipment, plus a recipe card to troubleshoot your future bakes at home. Whether it is eggless or standard, we make sure the recipes work in a regular home OTG.
