Of all the cakes I bake, the apple-cinnamon flavour is one of the most aromatic. This one has a buttery coconut oats crumble on top, making it extra scrumptious.

I skip the heavy cream frosting entirely. Instead, I caramelize fresh fruits like peaches and pears in jaggery to create a natural, sticky glaze that soaks right into the whole wheat sponge. It is a rustic way to bake, but it keeps the cakes moist for days without the need for artificial additives or preservatives.

My kitchen schedule revolves entirely around the local fruit calendar. When the first Alphonso mangoes arrive in Mumbai, they go straight into my tea cakes. When the summer heat peaks, I switch to peaches and figs, caramelizing them to bring out their deep, natural sweetness. Because I do not use maida or refined white sugar, the texture is naturally denser than a standard bakery sponge—more like a wholesome tea cake that pairs perfectly with your evening chai.

I work primarily with indigenous grains like Emmer (Khapli) wheat, jowar, and Ragi, which hold up better to the moisture of fresh fruit chunks. Whether it is an upside-down pear cake or an apple-cinnamon loaf with a coconut-oats crumble, the process is always from scratch. I even make my own spice blends for the apple cakes to ensure the aroma is just right.
