About Celebrating the Seasons with Fresh Fruits

I am very particular about using real fruit in my recipes. When you order a mango cake, you are getting fresh Alphonso aamras (pulp), not canned syrup or artificial essence. Because we bake in small, seasonal batches, these specials are only available when the fruit is at its absolute peak. If you see a fruit on the menu, grab it while it lasts.

Baking with the seasons is how I keep things fresh at JusBaked. My team and I wait for the markets to turn because that tells us it is time for a new menu.

Winter means we are busy with fresh strawberries. You will find them in our pull-me-up cakes and layered vanilla tubs. When the summer heat hits, we switch entirely to Alphonso mangoes. I insist on using real fruit pulp rather than tinned compotes, which is why our mango cheesecakes and chocolate mango cakes have that distinct, natural flavour. During the monsoon, we bring in fresh cherries to add a sharp, sweet kick to our dark chocolate sponges and dessert tubs.

Everything here is 100% eggless. I avoid artificial flavours because they ruin the taste of the fresh fruit. Since these items depend on what is fresh in the market, our menu changes often.
