Unlike our heavy designer cakes, these fruit creations prioritize the natural sponge and fresh produce. We avoid fondant here entirely, opting for a light whipped cream or ganache finish that ensures the vibrant, seasonal flavors of Alphonso mangoes, fresh strawberries, or blueberries remain the main event in every slice.
When you choose a fruit-based cake, you are choosing freshness over flash. Because we source our fruit based on what is currently in season, like those iconic Mumbai Alphonso mangoes or hand-picked strawberries, the flavor profile changes throughout the year, which keeps things interesting for our regulars.
Our process for these cakes is stripped back to let the ingredients speak. We start with a moist, artisanal sponge that is soaked in a light syrup, providing just enough sweetness to complement the fruit without overwhelming it. For our mango cakes, we use fresh, diced Alphonso slices, never canned pulp. For our mixed fruit options, we balance a variety of textures and tartness levels to ensure every bite is consistent.
