Why I Bake the Way I Do

I believe cake should taste good and feel good. My thing is 'naked' cakes - rustic, unfrosted, and all about the real flavours and textures. No heavy frostings, just the cake itself, sometimes with fresh fruit or edible flowers on top. When I pull a cake out of the oven and see how beautiful it looks, I always think, "Dekho kitna sundar lag raha hai" (Just look how pretty it is).

What Goes In (And What Stays Out)

  • Only whole grain flours like organic wheat, ragi, and jowar. No maida here.
  • Sweetness comes from jaggery, coconut sugar, or just dates for my sugar-free birthday cake for kids.
  • Always fresh fruits, nuts, seeds, and sometimes dark chocolate or spices.
  • Vegan rustic cakes? Yes, I use almond milk and coconut oil.
  • You won’t find white sugar, condensed milk, artificial flavours, or hydrogenated fats in my kitchen.

My Story

Hey, I’m Tushima. My kitchen’s my 'cake lab', and I bake from love, mostly for my kid’s school, teachers, and kiddos with birthdays. No maida, no chocolate, no icing, and eggless if you want. Mom duties sometimes interrupt, and perimenopause jet lag is real! Still, hearing 'super duper hit' makes it worth it. Won Mumbai’s Best Home Baker, but honestly, nothing beats seeing folks happy with my whole wheat vanilla sponge.
