When you crave both cake and traditional mithai, my Gulab Jamun cake is the perfect answer. It's a whole wheat cake filled with gulab jamuns, rose petals jam, and a dash of cardamom.
When oranges and rose petals meet, the result is this moist, super fragrant whole wheat cake with gulkand and chopped almonds. It’s absolutely yum.
About this collection
I don't use heavy cream frosting because I want the actual flavour of the ingredients to shine through. In my Gulab Jamun cake, for example, the syrup from the sweets infuses the whole wheat batter, so you get the texture of a cake with the heart of a mithai in every bite.
Baking with heritage flavours is my way of keeping things exciting. I grew up with these tastes, and putting them into a cake feels like the most natural thing in the world. When I make my Orange Gulkand Nuts cake, I use real orange zest to cut through the floral notes of the gulkand, balancing the sweetness with a touch of citrus.
Because I avoid refined sugar, I rely on the natural sweetness of jaggery and dates to complement these bold Indian flavours. You won't find any artificial essences here. Whether it is the cardamom and rose combination in my Gulab Jamun cake or the earthy, spicy notes in my other festive bakes, every element is there for a reason.
Since these are naked cakes, I spend extra time on the garnish. You will see fresh herbs, edible flowers, or roasted nuts on top—whatever pairs best with the main flavour profile. It makes the cake look rustic and honest, which is exactly how I believe a homemade treat should look. These cakes are popular for birthdays, intimate weddings, and even just a Sunday afternoon treat with chai.
