When you choose our Sashimi Moriawase, we serve three distinct grades of tuna—Akami, Chutoro, and Otoro—to give you a complete spectrum of texture and flavor. We never mask the quality of our air-flown fish with heavy sauces, as we believe the natural, clean taste of the sea should be the star of every bite.
At Ebisu, we practice Washoku, the traditional Japanese style of dining that emphasizes balance and seasonality. Our sushi and sashimi program is the core of this philosophy. We do not just serve rolls; we provide an education in texture and origin. Every piece of fish we serve is temperature-controlled and air-flown from Japan to ensure it arrives with the structural integrity required for precise slicing.
When you visit us in Saket or Gurugram, you will notice the difference in our Tuna preparation. We break down the fish into its elemental parts:
- Akami: The lean, deep-red portion with a clean, iron-rich flavor.
- Chutoro: The semi-fatty belly that provides a balance of meat and richness.
- Otoro: The prized, heavily marbled fatty tuna that essentially melts upon contact with your palate.
We also push the boundaries of texture with our Aburi (torched) series. By lightly searing the surface, we caramelize the natural oils of the fish, creating a smoky aroma that complements the cool, raw interior of the slice. For those who prefer a fusion touch, our Rainbow and Super California rolls combine fresh seafood with crisp vegetables and creamy avocado, ensuring every mouthful offers a contrasting crunch and silkiness.
