If you are tired of the same old sugary treats, you have to try these. The secret is the 48-hour fermented brioche dough—it is super soft and holds the savoury fillings perfectly. My Thai Chilli Bun is not just spicy; it is balanced with a sweet chilli jam that makes every bite addictive. They are best enjoyed warm, so if you are picking them up, pop them in the oven for a minute to get that fresh-out-of-the-fryer vibe.

People usually think of donuts as a sugar rush, but I think they make for the ultimate savoury snack. Whether it is a mid-work hunger pang or a weekend treat, these buns hit the spot.
The Process
It took me ages to get the dough right. I use a classic Italian brioche base, fermented for 48 hours. This is not just to be fancy; it gives the dough that incredible elasticity and subtle sweetness that contrasts perfectly with bold savoury fillings like Scallion & Sour Cream or Thai Chilli.
My Favourites
- Thai Chilli Buns: These are the real deal. I fill them with a punchy Thai chilli cream and finish them with my homemade chilli jam. It has that kick, but it is not overpowering.
- Scallion & Sour Cream: If you love creamy, tangy flavours, this is the one. It is comforting and honestly, a bit of a banger.
How to Serve
My buns are baked fresh, but they are absolutely glorious when warm. If you get a delivery, just zap them in the microwave for 10-15 seconds or a quick heat in the oven. It revives the cream inside and softens the crust just like when they leave my oven at New BEL Road.
