It is why our cakes have that fresh, vibrant kick that you just won't find in a standard bakery jam.
I believe that if you're paying for a fruit cake, you should actually taste the fruit. My process is simple but time-consuming. I take the best seasonal berries, simmer them down slowly with minimal sugar, and fold them into my Swiss Meringue buttercream.
My 3-Berry Victoria is the star here for a reason. It uses a blend of strawberries, raspberries, and blueberries that creates a depth of flavour that changes slightly with the seasons.
