About Fresh & Fruity
When you order a fresh and fruity bento cake, you are not getting artificial fruit essence. I prepare the fruit in my kitchen, whether it is hand-juicing oranges or creating a fresh berry compote, to ensure the flavour is bright and natural. Because I work with what is currently in season, these flavours are available for limited windows when the fruit is at its absolute best.
The balance between sweet buttercream and tart fruit is what makes these bento cakes work. Since these are small 300g cakes, they are designed to be a concentrated burst of flavour rather than a large, heavy dessert.
My process is straightforward:
- I select produce that is in peak season to ensure the best sweetness and acidity.
- Fruit is incorporated as a fresh compote or curd to cut through the richness of the Swiss Meringue or American Buttercream.
- Every cake is finished with fresh garnish, so you see exactly what you are eating.
